BACK-TO-SCHOOL RECIPE: WATERMELON KEBABS


The kids are back in school (as evidenced by the collective “Hooray!” from moms and dads nationwide). Even though my own “Little Watermelon” is still three years away from kindergarten, now is a good time to feature a few kid-friendly/lunchbox-friendly watermelon recipes.

This first recipe is for watermelon kebabs. It’s just watermelon, turkey, and cheese, but it makes a great lunch or after-school snack. Feel free to substitute ham for the turkey or skip the meat entirely. In place of the meat, you can add cucumber or another type of fruit.

WATERMELON KEBABS

INGREDIENTS

18 1-inch cubes of seedless watermelon
6 cubes of smoked turkey breast
6 cubes of cheddar cheese
6 coffee stirrers or beverage straws

INSTRUCTIONS

Place watermelon, turkey and cheese on stirrers or straws. Yup, it’s that easy.

    Easy is definitely better for me. That’s the first criteria I use when judging a recipe. If I can’t make it in 15 or 20 minutes, I’m not making it!
