RECIPE: CREAMY WATERMELON SALAD

Although I’m usually a meat and potatoes kind of guy, I can appreciate a good salad now and then, especially when it’s topped with an assortment of meats and potatoes. Salads containing watermelon, cream cheese and pecans – like today’s recipe — are also good.

This recipe calls for half a cup of whipping cream, which you’re instructed to whip into whipped cream. Making homemade whipped cream is fun (I’ve done it), so resist the urge to substitute the already whipped stuff. Also, I don’t have a photo for this recipe, so if anyone makes it, send me a picture and I’ll post it with this entry!

 



CREAMY WATERMELON SALAD

 

INGREDIENTS

4 cups watermelon balls, chilled

4 ounces cream cheese

2 tablespoons mayonnaise

1/2 cup whipping cream

1 1/4 cups diced celery

1/4 cup diced red bell pepper

1/2 cup pecans

INSTRUCTIONS

Blend cream cheese with mayonnaise until fluffy. Whip cream to soft peaks and fold into cream cheese. Fold in celery and bell pepper. Place watermelon balls in dessert glasses and spoon dressing over top. Sprinkle with pecans. Add sugar to taste to dressing for a sweeter salad.
