Cool? Yeah, I\u2019m a pretty cool guy (at least according to my two-year-old daughter), so I\u2019d probably like something called \u201cCool and easy watermelon pie.\u201d Easy? When it comes to recipes, easy is good. Watermelon? No explanation needed there. And pie? I haven\u2019t met one I didn\u2019t like.<\/p>\n<p>Put it all together, and you\u2019ve got a dessert that sounds so good, I had to make it for myself just to be sure. Recipe below, along with some photos of the process.<\/p>\n<h3><strong>COOL AND EASY WATERMELON PIE<\/strong><\/h3>\n<p>INGREDIENTS<\/p>\n<p>1 (3-ounce) package watermelon gelatin<br \/>\n1\/4 cup boiling water<br \/>\n1 (12-ounce) package of whipped cream, thawed<br \/>\n2 cups cubed seedless watermelon<br \/>\n1 graham cracker crust<\/p>\n<p>DIRECTIONS<\/p>\n<p>Dissolve gelatin in boiling water. Allow to cool to room temp. Whisk in Cool Whip. Fold in watermelon. Spoon into crust. Chill for 2-3 hours or overnight.<\/p>\n<p align=\"center\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3340\" title=\"pie ingredients\" src=\"https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2012\/12\/pie-ingredients.jpg\" alt=\"\" width=\"574\" height=\"416\" \/><\/p>\n<p align=\"center\">Only four ingredients (not including the water). I couldn\u2019t find watermelon-flavored gelatin, so I chose \u201cmelon\u201d flavored gelatin. Feel free to choose whichever flavor you\u2019d like \u2014 preferably something that pairs well with the diced watermelon in the pie.<\/p>\n<p align=\"center\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3341\" title=\"pie mix\" src=\"https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2012\/12\/pie-mix.jpg\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" srcset=\"https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2012\/12\/pie-mix-300x221.jpg 300w, https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2012\/12\/pie-mix.jpg 990w\" alt=\"\" width=\"580\" height=\"427\" \/><\/p>\n<p align=\"center\">Mix the dissolved gelatin (after it\u2019s cooled to room temperature), whipped cream and watermelon. Again, pretty easy. I put the gelatin in the fridge to cool faster, but don\u2019t leave it in there too long or it\u2019ll firm up. If that happens (it happened to me), just put it back on the stove to melt it back down to a liquid form.<\/p>\n<p align=\"center\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3342\" title=\"pie made\" src=\"https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2012\/12\/pie-made.jpg\" sizes=\"auto, (max-width: 578px) 100vw, 578px\" srcset=\"https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2012\/12\/pie-made-300x217.jpg 300w, https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2012\/12\/pie-made.jpg 985w\" alt=\"\" width=\"578\" height=\"418\" \/><\/p>\n<p align=\"center\">Add mixture to pre-made pie crust.
