<\/p>\nI\u2019m a huge fan of sandwiches whose names are abbreviated by simple letters. PBJ and BLT\u2019s are two of the best ones. You can\u2019t really combine those sandwiches though. I once tried a PBB. It wasn\u2019t terrible, but it was definitely better than the PBLT.<\/p>\n
Another tasty letter sandwich is the BCWTP \u2013 or the Bacon, Cheddar, Watermelon, Tomato and Pesto Sandwich. What\u2019s not to love about it? Bacon is great. Cheddar cheese is great. Fresh tomato is great. Pesto is great. And watermelon? I think we all know how I feel about that.<\/p>\n
I created one of these five-ingredient delicacies the other day for lunch and the result was something extraordinary. I had no doubts about the first three parts of the sandwich. Bacon, cheese and tomato have always been good friends. I\u2019ve always enjoyed pesto, too, even as a sandwich spread. But the watermelon was the best part. It added a little sweetness to balance out the savory bacon and pesto and really brought this sandwich to the next level. Definitely worth a try the next time you\u2019ve got some extra bacon, cheddar, watermelon, tomato and pesto lying around.<\/p>\n

BCWTP SANDWICH<\/b><\/p>\n
INGREDIENTS<\/p>\n
2 thick slices of bread (your choice), toasted
\n2 tablespoons pesto sauce
\n2 slices cheddar cheese
\n1 2\/3 inch thick slice seedless watermelon about the same size as the bread
\n2 thin slices of tomato
\n4 slices cooked crisp bacon
\n2 butter lettuce leaves<\/p>\n
INSTRUCTIONS
\n<\/b><\/p>\n
Spread the pesto over one side of each slice of toast. On one slice of toast stack the cheese, watermelon, tomato, bacon and lettuce on top of pesto. Place the other slice of toast, pesto side down, on top of the lettuce. Cut in half and enjoy.<\/p>\n
