It\u2019s no secret that watermelon is my favorite fruit (after all, I am \u201cThe Watermelon Guy\u201d), but if I had to choose a second favorite, it would definitely be pineapple. So sweet, so juicy, so flavorful. Now that I think about it, those are the same reasons I love watermelon!<\/p>\n

Pineapple and watermelon are two of the three key ingredients in today\u2019s recipe \u2013 Watermelon Rind, Carrot and Pineapple Slaw. The nice thing about this slaw is that it makes use of the watermelon rind, which is often tossed in the trash. But, like we\u2019ve talked about before<\/a> here on What About Watermelon, the rind is actually quite useful and packed with nutrients!<\/p>\n

This slaw is made with fat-free Greek yogurt and low-fat sour cream, which means it\u2019s a little better for you than regular slaw. As for what you serve it with, that\u2019s up to you, but I plan to serve mine with some grilled burgers. What will you serve yours with?<\/p>\n

Watermelon rind, carrot and pineapple slaw<\/a><\/h3>\n

INGREDIENTS
\n<\/b><\/p>\n

Dressing<\/b><\/p>\n

1\/4 cup fat-free, plain Greek yogurt
\n1\/4 cup low-fat sour cream
\n1 1 \/2 Tablespoons stone-ground mustard
\n1 Tablespoon apple cider vinegar
\n4 teaspoons fresh lemon juice
\n1 Tablespoon sugar
\n1 teaspoon poppy seeds
\n2 teaspoons olive oil
\nsalt and pepper to taste<\/p>\n

Slaw<\/b><\/p>\n

4 cups grated watermelon rind with fruit and green peel removed
\n1 cup grated carrot
\n1 1 \/2 cup diced fresh pineapple<\/p>\n

INSTRUCTIONS<\/b><\/p>\n

In a small bowl, blend dressing thoroughly and set aside. Place watermelon rind on several layers of paper towels to soak up excess fluid. In a medium-sized bowl, place dressing, rind, carrot and pineapple and toss to thoroughly coat. Serve.<\/p>\n","protected":false},"excerpt":{"rendered":"
