<\/strong><\/p>\nINGREDIENTS<\/strong><\/p>\n 1 small (2 \u00bd pounds) seedless red watermelon<\/p>\n 1 small (2 \u00bd pounds) seedless yellow watermelon<\/p>\n 2 ounces ricotta salata<\/p>\n \u00bd teaspoon coarse sea salt, preferably Maldon<\/p>\n 3 tablespoons sliced, fresh mint<\/p>\n DIRECTIONS<\/strong><\/p>\n Using a sharp knife, cut off rinds from watermelons. (You should have a total of two pounds peeled fruit.) Quarter each melon, and then cut into 3-inch-long, \u00bc-inch-thick slices. Arrange slices on a serving platter.<\/p>\n Using a vegetable peeler, shave paper-thin slices of ricotta salata over watermelon.
