As an excellent sources of iron, magnesium, vitamin E, and much more, quinoa is as versatile as rice, but with a richer, nuttier flavor.<\/p>\n<p>That\u2019s why it\u2019s a perfect pairing with watermelon in this mouth-watering recipe for <a href=\"http:\/\/www.watermelon.org\/Recipes\/Lemony-Quinoa-and-Watermelon-Salad-217.aspx\" target=\"_blank\" rel=\"noopener\">Lemony Quinoa and Watermelon Salad<\/a>! As you\u2019ll see below, pecans are optional, but the recipe also explains that adding a bit of fat from the nuts helps boost absorption of the lycopene in watermelon, a compound that helps lower the risk for cancer and heart disease.<\/p>\n<p><strong>Lemony Quinoa and Watermelon Salad<\/strong><br \/>\n<strong>Ingredients<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-5285\" src=\"https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2015\/02\/pic2.jpg\" sizes=\"auto, (max-width: 250px) 100vw, 250px\" srcset=\"https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2015\/02\/pic2-225x300.jpg 225w, https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2015\/02\/pic2.jpg 250w\" alt=\"pic\" width=\"250\" height=\"333\" \/>4 Tablespoons agave syrup<br \/>\n5 Tablespoons fresh lemon juice<br \/>\n4 Tablespoons lemon zest<br \/>\n1 Tablespoon rice wine vinegar<br \/>\nSalt to taste<br \/>\n2 cups cooked black quinoa<br \/>\n2 \u00be cup watermelon cubes<br \/>\n1 kiwi, peeled and diced<br \/>\n4 Tablespoons shredded coconut<br \/>\n\u00bd cup candied pecans*<\/p>\n<p><strong>Instructions<\/strong><\/p>\n<p>1. In a medium bowl, blend thoroughly the agave syrup, lemon zest, lemon juice, vinegar, and salt. Add the quinoa and toss until fully coated. Set aside to allow flavors to blend.<br \/>\n2. Add the watermelon, kiwi, coconut, and nuts. Toss.<br \/>\n3. Divide into four bowls and garnish with mint sprig.<\/p>\n<p>*Purchase already candied nuts, such as Sahale Snacks Valdosta Pecans, or use the following recipe:<\/p>\n<p><strong>Candied Pecans:<br \/>\n<\/strong><br \/>\nToss \u00bd cup pecans with 1 teaspoon olive oil. Mix a dash each of ground cardamom, cinnamon, cloves, coriander, cayenne, cumin, and salt with 1 tablespoon powdered sugar. Toss nuts with this spice blend and roast in a 350 degree oven for 10 to 12 minutes or until crisp, stirring occasionally.
