Maybe it\u2019s because of the wide fettucine-like noodles. Maybe it\u2019s because of the chopped peanuts. All I know is that it\u2019s good, and I\u2019ve never met a pad thai that I didn\u2019t like.<\/p>\n<p>So, when I found <a href=\"http:\/\/www.watermelon.org\/Recipes\/Watermelon-Pad-Thai\" target=\"_blank\" rel=\"noopener\">this recipe for Watermelon Pad Thai<\/a> on the National Watermelon Promotion Board website, I knew that I had to make it for my next new year\u2019s resolution update (in 2015, I\u2019ve vowed to prepare more meals using watermelon).<\/p>\n<p>Anyhow, my first-ever attempt at making homemade pad thai turned out pretty well (that\u2019s a picture of it above). The watermelon added a hint of sweetness to the pad thai, which paired well with the saltiness of the soy sauce and saut\u00e9ed shrimp.
