Now that the school year is back in full swing, I\u2019m reminded of two things: 1) how quickly time flies and 2) how much I love simple recipes. While those don\u2019t seem immediately related, trust me, they are. As the father of a four-year-old, spare time is incredibly valuable when you realize that you have absolutely none of it. From the second I get home until the moment my head hits the pillow, I\u2019m in full-on Daddy Mode.<\/p>\n

I mentioned that I love simple recipes because they exist to create a great meal for people who don\u2019t want to sacrifice time, taste or nutrition. This week, I\u2019m whipping up this awesome recipe for Fresh Mozzarella Salad<\/a>. Will my daughter like it? Maybe, but if she doesn\u2019t, that just means there\u2019s more for me!<\/p>\n

FRESH MOZZARELLA SALAD\"1\"<\/p>\n

INGREDIENTS<\/p>\n

2 cups seeded, small watermelon balls<\/p>\n

2 cups fresh mozzarella pieces<\/p>\n

1 cup chopped fresh basil (purple or green)<\/p>\n

Bunch of scallions, trimmed and chopped<\/p>\n

1\/3 cup extra virgin olive oil<\/p>\n

Pinch salt and pepper to taste<\/p>\n

Dash balsamic vinegar as desired<\/p>\n

INSTRUCTIONS<\/p>\n

Toss together the watermelon, mozzarella, basil, scallions and oil. Season with salt and pepper to taste. Serve over a bed of baby greens, with crostini on the sides. Drizzle a bit of balsamic vinegar if desired.<\/p>\n
