I clicked on the link and what greeted me on the other side was a curious culinary concoction known as the watermelon steak.<\/p>\n<p>The watermelon steak is a simple thing \u2013 a slice of watermelon (without rind) pan-seared in sherry, butter, salt and pepper. It\u2019s a big hit at a restaurant outside Boston called <a href=\"http:\/\/www.51lincolnnewton.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">51 Lincoln<\/a>. At 51 Lincoln, Chef Jeffrey Fournier serves it as a $10 appetizer alongside feta cheese and a cantaloupe and citrus salad. I haven\u2019t eaten at 51 Lincoln, but if I find myself in that neck of the woods anytime soon (unfortunately, I won\u2019t), I\u2019ll make it a point to stop in to sample Chef Fournier\u2019s handiwork.<\/p>\n<p>Below is the recipe for watermelon steak. According to the <a href=\"http:\/\/www.boston.com\/ae\/food\/articles\/2007\/08\/08\/watermelon_steak\/\" target=\"_blank\" rel=\"noopener noreferrer\">Boston Globe website<\/a> where I found\u00a0 it, the recipe is \u201cadapted from\u201d 51 Lincoln. I don\u2019t know whether\u00a0 that means it\u2019s the exact recipe, but it looks close. Not that I\u2019d know what a watermelon steak recipe should look like, although I am alarmed that the watermelon has to roast in a pan for two-and-a-half hours at 350 degrees. That seems like a long time, but what do I know?<\/p>\n<p><a href=\"https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2010\/05\/watermelonsteak1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-698  aligncenter\" title=\"watermelonsteak1\" src=\"https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2010\/05\/watermelonsteak1.jpg\" sizes=\"auto, (max-width: 425px) 100vw, 425px\" srcset=\"https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2010\/05\/watermelonsteak1-300x183.jpg 300w, https:\/\/www.whataboutwatermelon.com\/wp-content\/uploads\/2010\/05\/watermelonsteak1.jpg 425w\" alt=\"\" width=\"425\" height=\"260\" \/><\/a><strong>WATERMELON STEAK<\/strong><br \/>\n(Adapted from 51 Lincoln recipe)<\/p>\n<p>INGREDIENTS<\/p>\n<p>Vegetable oil (for brushing)<br \/>\n1\/4 large watermelon<br \/>\n1\/4 bottle cream\u00a0 sherry<br \/>\n4 tablespoons (1\/2 stick) unsalted butter<br \/>\nSalt and pepper to taste<br \/>\nFeta cheese (served on side)<\/p>\n<p>DIRECTIONS<br \/>\n1. Set the oven at 350 degrees. Have a large roasting pan on hand. Oil a piece of parchment paper about the size of the pan.<br \/>\n2. Discard the rounded end of the watermelon. Cut the watermelon into 4 even slices, each at least 1-inch thick. Remove the rind.<br \/>\n3. Place the slices in the roasting pan. Pour the sherry over them and dot with butter. Sprinkle with salt and very lightly with pepper. Cover the watermelon with the parchment paper, then cover the pan tightly with foil. Roast the slices for 2 1\/2 hours or until charred around the edges.<br \/>\n4. Place watermelon on a rimmed baking sheet to cool. Strain cooking juices.
