Most people aren\u2019t really sure what Cinco de Mayo is, except that it\u2019s an opportunity each year to have fun with friends and sample some awesome south-of-the-border-themed food and drinks on the fifth of May. While that may be true, it\u2019s actually a lot more than that. Here\u2019s the <a href=\"http:\/\/en.wikipedia.org\/wiki\/Cinco_de_Mayo\" target=\"_blank\" rel=\"noopener noreferrer\">official low down<\/a>, in case you\u2019re interested.<\/p>\n<p>To celebrate the holiday, I\u2019ll be meeting up with some friends later today and I\u2019ve been asked to \u201cbring a dish.\u201d This year, I\u2019m combining my social life and my new blogging life by making something I\u2019m calling \u201cCinco de Mayo Watermelon Salsa.\u201d<\/p>\n<p>You\u2019d be surprised at how tasty this recipe really is.\u00a0 What a lot of people don\u2019t realize is that watermelon works like tomatoes in many recipes and, just like tomatoes, watermelon is packed with lycopene, an antioxidant. In fact, it has 40 percent more of the stuff than tomatoes!<\/p>\n<p>If anyone makes this recipe, leave a comment to let me know how you liked it. You can also check out more watermelon salsa recipes <span class=\"removed_link\" title=\"http:\/\/www.watermelon.org\/recipeSalsas.asp\">here<\/span>!<\/p>\n<p><strong>CINCO DE MAYO WATERMELON SALSA<\/strong><\/p>\n<p>INGREDIENTS<\/p>\n<p>2 cups chopped watermelon (seeds removed)<br \/>\n3\/4 cup chopped sweet onion<br \/>\n3\/4 cup canned black beans, rinsed and drained<br \/>\n1\/4 cup chopped seeded jalapen\u00f5 chilies<br \/>\n1\/4 cup chopped fresh cilantro<br \/>\n1 large clove garlic, finely chopped<br \/>\n1 tablespoon brown sugar<br \/>\n1\/2 teaspoon salt<\/p>\n<p>INSTRUCTIONS: Stir together all ingredients in bowl.
