Although I\u2019m usually a meat and potatoes kind of guy, I can appreciate a good salad now and then, especially when it\u2019s topped with an assortment of meats and potatoes. Salads containing watermelon, cream cheese and pecans \u2013 like today\u2019s recipe \u2014 are also good.<\/p>\n

This recipe calls for half a cup of whipping cream, which you\u2019re instructed to whip into whipped cream. Making homemade whipped cream is fun (I\u2019ve done it), so resist the urge to substitute the already whipped stuff. Also, I don\u2019t have a photo for this recipe, so if anyone makes it, send me a picture and I\u2019ll post it with this entry!<\/p>\n

CREAMY WATERMELON SALAD<\/span><\/h3>\n

INGREDIENTS<\/strong><\/p>\n

4 cups watermelon balls, chilled<\/p>\n

4 ounces cream cheese<\/p>\n

2 tablespoons mayonnaise<\/p>\n

1\/2 cup whipping cream<\/p>\n

1 1\/4 cups diced celery<\/p>\n

1\/4 cup diced red bell pepper<\/p>\n

1\/2 cup pecans<\/p>\n

INSTRUCTIONS<\/strong><\/p>\n

Blend cream cheese with mayonnaise until fluffy. Whip cream to soft peaks and fold into cream cheese. Fold in celery and bell pepper. Place watermelon balls in dessert glasses and spoon dressing over top. Sprinkle with pecans. Add sugar to taste to dressing for a sweeter salad.<\/p>\n","protected":false},"excerpt":{"rendered":"
