RECIPE: THE PBW SANDWICH



I’m a fan of the peanut butter and jelly sandwich. Have been ever since I was three-and-a-half years old. It was the first sandwich I learned how to make on my own, and I look forward to passing my PBJ talents along to my own daughter.

Still, I was cautiously excited when I read online about the PBW sandwich, which replaces the jelly with a slice of cold watermelon. So I tried it, and it was surprisingly good! The watermelon gives the sandwich a little more texture and provides just the right amount of juiciness to offset the thickness of the peanut butter. If you’re feeling adventurous, I definitely recommend it, but as I note below, be sure to place peanut butter on BOTH pieces of bread to prevent the watermelon from turning the sandwich into a soggy mess.

THE PBW SANDWICH

INGREDIENTS

  • Bread (two slices)
  • Peanut butter
  • Watermelon

 

DIRECTIONS

Remove bread from bag. To reseal the bag, discard the twisty tie thing and use the “twist and tuck under” tactic. I think we can all agree that’s a much easier method.

Spread peanut butter on both slices of bread to prevent the watermelon from making the bread soggy. Place one watermelon slice (rind removed), a quarter to half an inch thick, between the two slices of bread. (IMPORTANT: Make sure the peanut butter side of the bread is on the INSIDE of the sandwich. Placing the peanut butter on the outside of the sandwich is not recommended.)

Serve with a tall glass of skim milk.
